Slow roasted salmon and veggies


Olive Oil

Salmon spices: pepper, paprika, salt, Oregano

Veggies: potatoes, peppers, broccoli, mushrooms

Veggie spices: salt, oregano, thyme


1. Oven @250

2. Cover salmon skin side down with olive oil and spices and garlic

3. Cook for about 10-15 mins

4. Increase oven to 425

5. Toss veggies with oil, garlic and spices and roast for about 25 mins

I don’t love salmon, the only salmon I really like is this slow roasted black pepper salmon that is cold from Whole Foods. So this is my attempt, the veggies are great but the salmon is ok. My husband loves it. I think I need to buy a pepper grinder and try that and eat it cold for me to really enjoy it. Slow roasting is the way to go though! So much more moist than a higher temp. I also want to try in slow cooker.
